Blueberry & Baby Greens Salad with Goat Cheese Bruschetta

Ingredients

  • 12 oz. baby spinach
  • 1 1/2 cups fresh blueberries
  • 1 whole small red onion (thinly sliced)
  • 1/4 cup Regina┬« White Wine Vinegar
  • 2 Tbsp. olive oil
  • 2 Tbsp. orange juice
  • 2 Tbsp. sugar
  • 1 tsp. poppy seeds
  • 1/2 tsp. salt
  • 1/4 cup almonds or hazelnuts (chopped)
  • 8 French bread slices (toasted)
  • 2 oz. Goat cheese

Directions

In a large bowl, toss spinach, blueberries, and onion. In a small bowl, whisk vinegar, oil, sugar, seeds, and salt. Pour dressing over salad, tossing gently to coat. Spoon salad onto four plates, sprinkle with nuts. Spread toast slices evenly with cheese. Top each salad with two bruschetta.
