Jo Ann’s Unstuffed Peppers
Beef, peppers, onion, rice and tomatoes make up this delicious dish.
1 1/2 lb.
large whole green peppers (sliced lengthwise)
whole yellow onion (sliced)
canned whole tomatoes (drained and chopped)
Regina® White Wine Vinegar
white rice (cooked)
whole pita pockets
In large skillet over medium-high heat, brown ground beef; drain and return to skillet. Stir in green peppers, onion, and beef gravy. Simmer until peppers are tender, about 15 minutes. Add tomatoes; simmer 5 minutes longer. Remove from heat and add Regina® White Wine Vinegar and rice. Stir until blended. Slice pita pockets in half. Spoon ground beef mixture onto bottom half of pita, replace top and serve.
