Minestrone Pasta Salad

Pasta salad with beans and a variety of vegetables.

Ingredients

  • 1/2 lb. macaroni (cooked)
  • 1 15.5 oz. can Joan Of Arc® Light Red Kidney Beans (rinsed and drained)
  • 1/2 pt. grape tomatoes (halved)
  • 1 medium zucchini (cut lengthwise and into thin slices)
  • 1 stalk celery (sliced)
  • 1 medium carrot (thinly sliced)
  • 1/4 cup green onions
  • 1/2 cup mayonnaise
  • 1/3 cup Parmesan cheese (grated)
  • 3 Tbsp. Regina® White Wine Vinegar
  • 2 tsp. Polaner® Chopped Basil
  • 2 tsp. granulated sugar
  • 1/2 tsp. Accent® Flavor Enhancer

Directions

Prepare dressing: In large bowl, mix 1/2 cup mayonnaise, 1/3 cup grated Parmesan cheese, 3 Tbsp. Regina® Red Wine Vinegar, 1 Tbsp. Polaner® Chopped Garlic, 2 tsp. Chopped Basil, 2 tsp. granulated sugar, and 1/2 tsp. Accent® Flavor Enhancer. Stir in remaining ingredients. Serve immediately or refrigerate to serve later. For best flavor, bring salad to room temperature before serving.
