Shanghai Salad with Chicken

Salad with bean sprouts, scallions and lettuce.

Ingredients

  • 1/4 cup salad oil
  • 3 Tbsp. Regina ┬« Red Wine Vinegar
  • 2 Tbsp. soy sauce
  • 1 Tbsp. ketchup
  • 1 Tbsp. sugar
  • 1 tsp. fresh ginger (grated)
  • 1 whole small clove garlic (crushed)
  • 2 cups chicken (cooked and shredded)
  • 1/2 cup red pepper (julienned)
  • 1/2 cup celery (sliced)
  • 1/3 cup carrots (grated)
  • 1/3 cup bean sprouts (drained)
  • 1/3 cup scallions (sliced)
  • 4 cups lettuce (shredded)

Directions

In large bowl, whisk together oil, vinegar, soy sauce, ketchup, sugar, ginger and garlic. Add chicken, red pepper, celery, carrots, bean sprouts and scallions, tossing to coat well; cover. Refrigerate at least 2 hours, stirring occasionally. Arrange 1 cup lettuce on salad plate. Top with 1/2 cup chicken mixture; serve. Store, refrigerated, up to 3 days. *1 tsp. ground ginger may be substituted.
